Method
Make the cornbread
- Heat the oven to 400°F and grease an 8-inch square baking pan with 1 1/2 teaspoons of the vegetable oil.
- Whisk the cornmeal, flour, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk the buttermilk and 2 eggs, then whisk in the melted butter.
- Stir the wet ingredients into the dry ingredients just until combined.
- Pour the batter into the prepared pan and bake for 20–25 minutes, until golden and a toothpick inserted in the center comes out clean.
- Cool completely in the pan.
Dry the bread
- Reduce the oven to 250°F and spread the bread cubes on a baking sheet.
- Bake for 25–35 minutes, stirring once, until dry and crisp.
Assemble and bake the dressing
- Grease a 9x13-inch baking dish with the remaining 1 1/2 teaspoons vegetable oil.
- Crumble all the cooled cornbread into a large bowl with the dried bread cubes.
- Melt the butter in a 12-inch skillet over medium heat, add the onion and celery, and cook for 8–10 minutes, stirring occasionally, until tender.
- Stir the cooked vegetables, sage, salt, and pepper into the bread mixture.
- Whisk the broth with the remaining 2 eggs and pour over the mixture, folding until evenly moistened.
- Transfer to the prepared baking dish, cover with foil, and bake at 350°F for 30 minutes.
- Uncover and bake for 15–20 minutes more, until golden on top, set in the center, and at least 160°F in the center.
- Rest for 10 minutes before serving.
Notes
For the best texture, dry the bread cubes until crisp and let the cornbread cool completely before crumbling. Refrigerate leftovers for up to 4 days; freezer-friendly for up to 3 months. Use vegetable broth instead of chicken broth for a vegetarian variation.
