Ingredients
  

Cheese Wraps
  • 2 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
Beef Filling
  • 1 lb ground beef
  • 1 tbsp taco seasoning (no added sugar)
  • 0.25 cup water
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup sour cream
  • 1 cup shredded lettuce
  • 0.5 cup diced tomato
  • 2 tbsp sliced jalapeños (optional)
  • 0.25 cup diced avocado

Method
 

Brown the beef
  1. Heat a nonstick skillet over medium-high heat and cook the ground beef until no longer pink, about 6 minutes, breaking it into crumbles. Stir in the taco seasoning and water, then simmer for 3 minutes until thickened.
Make the cheese wraps
  1. Heat a nonstick skillet over medium heat. Sprinkle a thin, even layer of mozzarella and cheddar in a large circle about 8 inches wide, and cook 3-4 minutes until the edges turn golden and lacy and the center is fully melted and set.
Cool slightly
  1. Carefully lift the cheese wrap with a spatula onto parchment paper and let it firm up for 60 seconds. It should crisp as it cools and become pliable enough to fold.
Assemble the crunchwrap
  1. While the cheese wrap is still warm and flexible, place a scoop of beef filling in the center, then add shredded cheddar, sour cream, lettuce, diced tomato, and jalapeños. Keep the toppings centered so the edges can fold up evenly.
Fold and seal
  1. Fold the edges of the cheese wrap up and over the filling toward the center, working around like a fan and pressing gently to seal into a hexagon shape.
Crisp the outside
  1. Return the folded wrap seam-side down to the warm skillet and cook for 1-2 minutes until golden and crisp on the outside.
Serve
  1. Slice the crunchwrap in half and serve immediately, topped with diced avocado.

Notes

Work quickly while the cheese wrap is warm and pliable; if it hardens before folding, place it back in the skillet on low heat for a few seconds to soften. Store assembled leftovers in the refrigerator up to 3 days for best texture, reheating in a skillet to re-crisp. Freezing is not recommended because the cheese wrap texture won’t hold up well. Dietary swap: use no-sugar-added taco seasoning or a sugar-free seasoning to keep it keto-friendly.
