Bacon-Wrapped Green Bean Bundles

Bacon-wrapped green bean bundles are blanched, wrapped in flexible bacon, and baked with a buttery brown sugar glaze. The bacon turns crisp while the glaze bubbles around the bright green, crisp-tender beans.

Ingredients

For the bundles
  • 2 qt water
  • 1 tsp kosher salt
  • 1.5 lb green beans fresh, trimmed
  • 8 bacon slices, regular-cut
For the glaze
  • 4 tbsp unsalted butter
  • 0.25 cup light brown sugar packed
  • 1 tsp soy sauce
  • 0.25 tsp garlic powder

Equipment

  • 1 rimmed baking sheet
  • 1 4-quart pot
  • 1 12-inch skillet
  • 1 small saucepan

Method

Make the bundles
  1. Heat the oven to 400°F and line a rimmed baking sheet with foil.
  2. Bring the water and salt to a boil in a 4-quart pot, add the green beans, and cook for 3 to 4 minutes until bright green and crisp-tender. Drain and pat completely dry.
  3. Cook the bacon in a 12-inch skillet over medium heat for 4 to 5 minutes, turning once, until some fat has rendered but the slices are still flexible. Drain on paper towels.
  4. Divide the green beans into 8 bundles of about 8 to 10 beans each, wrap one bacon slice around each bundle, and place seam-side down on the baking sheet.
Bake the bundles
  1. Bake at 400°F for 15 minutes.
Make the glaze
  1. Melt the butter in a small saucepan over low heat, stir in the brown sugar, soy sauce, and garlic powder, and cook for 1 to 2 minutes until combined.
Finish the bundles
  1. Brush the glaze over the bundles and bake for 8 to 10 minutes more, until the bacon is browned and crisp and the glaze is bubbling.

Notes

For the crispest bacon, pat the beans completely dry before wrapping. Refrigerate leftovers for up to 3 days; freezer storage is not recommended because the beans can become soft. For a dairy-free version, use a plant-based butter substitute.
