Ingredients

  • 1 lb bulk pork sausage
  • 4 tbsp unsalted butter
  • 1 yellow onion large, diced
  • 3 ribs celery diced
  • 2 apples medium, peeled, cored, and diced
  • 1 package (12 oz) unseasoned dried bread cubes about 10 to 12 cups
  • 2 tbsp fresh parsley chopped
  • 1 tsp rubbed sage
  • 0.5 tsp dried thyme
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 2.5 cup low-sodium chicken broth
  • 2 eggs large

Equipment

  • 1 9x13-inch baking dish
  • 1 12-inch skillet

Method

  1. Heat the oven to 350°F.
  2. Grease a 9x13-inch baking dish.
  3. Cook the sausage in a 12-inch skillet over medium heat, breaking it into small pieces, until browned and cooked through to 160°F, about 8 to 10 minutes.
  4. Transfer the sausage to a large mixing bowl.
  5. Melt the butter in the skillet, then add the onion, celery, and apples and cook, stirring occasionally, until softened, about 6 to 8 minutes.
  6. Add the cooked vegetables, bread cubes, parsley, sage, thyme, salt, and pepper to the sausage and toss to combine.
  7. Whisk the broth and eggs in a separate bowl, pour over the bread mixture, and toss until evenly moistened.
  8. Transfer the mixture to the prepared baking dish.
  9. Cover the dish tightly with foil and bake for 30 minutes.
  10. Uncover and bake for 20 to 25 minutes, until the center reaches 160°F and the top is golden.
  11. Let the stuffing rest for 10 minutes before serving.

Notes

For even baking, spread the bread mixture evenly in the dish and keep it covered for the first bake. Refrigerate leftovers for 3 to 4 days; freeze for up to 3 months. For a gluten-free variation, use gluten-free dried bread cubes.
