Method
Mix and shape the patties
- In a large bowl, combine cooked salmon, panko breadcrumbs, large egg, mayonnaise, fresh dill, green onions, Dijon mustard, lemon zest, garlic powder, salt, and black pepper.
- Mix gently until just combined, keeping the salmon flaky instead of mashing it.
- Divide the mixture into 6 equal portions and form patties about 3/4 inch thick.
- Chill the patties for 10 minutes in the fridge to help them hold together.
Air fry
- Preheat the air fryer to 375°F for 3 minutes.
- Lightly spray the air fryer basket with cooking spray or olive oil to prevent sticking.
- Place the patties in a single layer with space between each, then lightly spray or brush the tops with cooking spray or olive oil.
- Air fry the patties for 8 minutes, then flip carefully.
- Air fry for an additional 6–7 minutes until deeply golden and crisp, reaching an internal temperature of 145°F.
Make the lemon-dill sauce and serve
- While the patties cook, whisk together Greek yogurt, lemon juice, fresh dill, and salt until smooth.
- Serve the patties warm with a generous dollop of lemon-dill sauce.
Notes
For the crispiest edges, avoid overcrowding the air fryer basket and leave space between patties. You can form patties ahead and refrigerate up to 1 day before air frying. Freezing: not recommended for best texture, but leftovers keep 3 days in the fridge. Dietary swap: for dairy-free, use a plain dairy-free Greek-style yogurt and keep the rest the same.
